Santa Clara High School located in Santa Clara, CA. offers two levels of Family and Consumer Courses. Culinary 1 is the next step after taking the full year Culinary classes offered at Buchser or Peterson Middle school, but are open to all Junior & Senior students, with no prerequisite required. Culinary 2 is a full year course offered to students who have successfully completed Culinary 1.

CULINARY 1: This Introduction to the Culinary Arts offers students the opportunity to prepare a variety of dishes including breakfast selections, soups, salads, entrees, even sushi. Baking is a focus of the course as well, and students have the opportunity to bake a variety of foods including yeast & quick breads, pies, cookies & cakes The course will cover culinary vocabulary and skills, culinary math, safety & sanitation, creative food presentation, nutrition and an overview of careers within the culinary/ hospitality industry. Culinary 1 is a UC "a-g" approved course, in the "g" category.

CULINARY 2: The widely established adage, “You eat with your eyes” defines the importance of the “Art” in Culinary Arts. Applying the fundamental techniques of culinary arts and baking and pastry arts learned in Culinary 1, in this course students will learn to present, package and market food using elements of design and focusing on the visual aspect of Culinary Arts. Students will create their own unique recipes, learn food styling techniques and learn the basics of food photography. Event planning will be an ongoing focus of this course. Students will experience a wide range of creative tasks, required in producing real events and have the opportunity as a team to analyze and critique their options. A class business will be run by students and will require them to do food product development and package design as well as marketing their products to potential customers. Through this variety of experiences students will develop an understanding of aesthetics with relation to food. This course will allow students the opportunity to be creative and expressive through food with the goal of building a life-long passion for the “Art” of Culinary Arts.
